Roasted Mediterranean Prawns with Garlic and Chili

Once you have that pizza oven up to temperature (or especially when it slowly starts to cool down after a pizza session), it would be a shame not to use it for other dishes. The intense radiant heat works wonders for vegetables, meat, and bread.

An absolute favorite that benefits from that 400°C+ heat is Roasted Mediterranean Prawns with Garlic and Chili . The high temperature ensures that the shells sear lightly and release an insane flavor, while the meat inside remains super juicy.

Roasted Prawns from the Pizza Oven

Preparation time: 5 minutes preparation, 3-4 minutes baking time.

What do you need?

  • Large raw prawns: (with shell and head for the most flavor).

  • Olive oil: Of good quality.

  • Garlic: 3 cloves, thinly sliced.

  • Red pepper: Finely chopped (with or without seeds for the heat).

  • Lemon: In parts.

  • Fresh parsley: Coarsely chopped.

  • Coarse sea salt.

  • Cast iron pan (skillet): Essential for the pizza oven! Available in the shop

The Step-by-Step Plan

  1. The Oven: Make sure your Nero is nice and hot (around 350°C - 400°C ). Slide your empty cast iron pan into the oven for 2 minutes to get it scorching hot.

  2. The Marinate Shortcut: Mix the prawns in a bowl with a generous splash of olive oil, the garlic, and the red pepper. Make sure they are well coated.

  3. Popping: Carefully remove the hot pan from the oven (use good gloves!). Throw in the prawns. You will hear them sizzle immediately.

  4. Baking: Slide the pan back into the oven, close to the fire/burner.

    • After 1.5 minutes : Briefly remove the pan and toss the prawns so that the other side also heats up.

    • After another 1.5 minutes : The prawns should be pink/orange with a blackened edge here and there on the shell.

  5. Finishing touch: Immediately squeeze a lemon wedge over the hot pan (watch out for the steam!), sprinkle the sea salt and fresh parsley over it.

Why this works so well:

In a standard kitchen oven, shrimp often cook slowly, which can make them tough. In your Nero pizza oven, they sear so quickly that the juices are retained.

Serving suggestion: Serve this with a piece of crusty baguette. You can also briefly place the bread in the pizza oven (15 seconds is often enough!) to grill it. Use the bread to dip the remaining garlic oil from the pan.
